Instructions:

  • Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Place parchment paper on a baking pan and set it aside.
  • For optimal results, heat the olive oil in a big skillet over medium heat. After around fifteen to twenty minutes, add the sliced onions and continue to cook them until they become tender and caramelised. In order to prevent the burning, stir occasionally.

  • On a second baking sheet, arrange the butternut squash that has been chopped while the onions are in the process of caramelising. The dish should be seasoned with salt, pepper, and dried thyme, and drizzled with olive oil. Roast in an oven that has been warmed for twenty to twenty-five minutes, or until the meat is tender and has a golden hue.
  • Transfer the onions and squash to a large mixing bowl once they have reached the desired level of doneness. During the time when the squash and onions are still warm, add the fresh spinach leaves to the bowl. The heat will cause the spinach to get wilted.

  • Balsamic vinegar, grated Parmesan cheese, and roasted pine nuts (if using) should be mixed in after the pan has been heated. Be sure to thoroughly blend all of the flavours. When necessary, adjust the seasoning.
  • Make a circle out of one sheet of puff pastry on a surface that has been lightly dusted with flour. The circle should be large enough to cover the filling, and you should leave a border around the borders. The rolled-out pastry should be placed on the baking sheet that has been prepared.

  • Spread the mixture of onion, squash, and spinach evenly across the centre of the dough circle, but be sure to leave a border around the perimeter of the circle.
  • The second sheet of puff pastry should be rolled out into a circle that is around the same size as the first one made. After placing it carefully on top of the filling, make sure that it thoroughly covers it.

  • To ensure that the Pithivier is completely sealed, push the edges of the two pastry rounds together using either a fork or your fingers. In the event that you require it, trim away any excess dough and crimp the edges for a decorative finish.
  • Use the egg wash that has been beaten to brush the top of the pithivier. Should you so wish, you can add a dash of poppy seeds or sesame seeds for an additional touch.

  • For the purpose of allowing steam to escape while the dough is being baked, create a few slits on the top of the pastry using a sharp knife.
  • The Pithivier should be baked in an oven that has been warmed for thirty to thirty-five minutes, or until the pastry is golden brown and crispy.
  • After it has been baked, take it out of the oven and allow it to cool down for a short while before slicing it and serving it.
