  • 1¾ cups cake flour (188g)
  • 1 teaspoon baking powder

  • ½ cup salted butter, softened
  • 1 cup granulated sugar (200g)

  • ½ cup sour cream, room temperature
  • 2 teaspoons clear vanilla extract
  • ½ cup milk, room temperature
  • ½ cup rainbow sprinkles

  • Using cupcake liners, prepare muffin tins and preheat the oven to 350 degrees Fahrenheit. The butter and sugar should be beaten together for three minutes on high speed in a stand mixer equipped with a paddle attachment or in a handheld electric mixer until the mixture is fluffy and creamy. Using a rubber spatula, scrape the edges of the bowl as well as the bottom of the bowl.
