Testy Pineapple Bread Recipe

Crushed pineapples, lime zest, and juice make pineapple bread a tasty snack or dessert with a sticky pineapple glaze. Our homemade pineapple bread is wonderful and glad to serve to family and friends.

INGREDIENTS

– 1/2cupwhite granulated sugar – 1/4cuplight brown sugar – 1/2cupunsalted buttersoftened – 2egg – 1 1/2cupsall-purpose flour – 2teaspoonsbaking powder – 1/4cuppineapple syrupfrom the canned pineapple – 2tablespoonsheavy cream – 1cupcrushed pineappledrained - do not discard the syrup – 1teaspoonvanilla – 1teaspoonlime zest – 1teaspoonlime juice – 1/4teaspoonsalt Glaze: – 1cuppowdered sugar – 1teaspoonlime juice – 2tablespoonspineapple syrupor as needed

Start with a 350-degree oven. Grease and line an 8-inch x 4-inch loaf pan with parchment paper so it hangs on the sides for easy bread removal.

Mix sugars and butter in a large bowl until frothy.

Next, add eggs one by one. Mix flour, baking powder, and salt in another bowl.

Then add half the flour mixture and pineapple syrup to the egg mixture. whisk gently, then add the remaining flour and heavy cream and whisk again.

Mix in crushed pineapple, vanilla, lime zest, and juice. DO NOT overmix batter! Pour batter into prepared pan and bake on middle rack for 45–55 minutes or until a toothpick inserted into the centre comes out clean.

If the top browns quickly, tent with aluminium foil.

Once baked, place the pan on a wire rack and allow the bread rest for 10 minutes before removing it to cool.

Combine glaze ingredients and whisk until smooth. Spread it evenly on cooled bread. Sprinkle if desired.
