With Soft Glazed Gingerbread Cookies, it's easy to make cookies that really stand out. This could be your best cookie of the season—it's soft, has just the right amount of spice, and is lightly glazed to show off its pretty designs.

WET INGREDIENTS – 6 Tbsp unsalted butter, at room temperature – 1/3 packed cup plus 2 tbsp dark brown sugar – 1/3 cup molasses, do not use blackstrap, which is bitter. – 1 large egg yolk DRY INGREDIENTS – 1 ¾ cups plus 2 tbsp all-purpose flour – 1 tbsp Dutch-processed cocoa powder – ½ tsp baking soda – 1 tsp ground ginger – ½ tsp ground cinnamon – 1/8 tsp ground cloves – ¼ tsp salt – ¼ tsp freshly ground black pepper GLAZE – 1 cup sifted confectioner’s sugar – 1 Tbsp unsalted butter, melted – ½ tsp vanilla extract – 1 Tbsp plus 1 tsp warm water

Pre-heat the oven to 375°F and freeze cookie stamps. Mix butter, sugar, and molasses in a stand mixer or electric beaters. Add egg yolk.

Sift dry ingredients. Beat the butter mixture on low while slowly adding the dry ingredients until the dough comes together.

Knead the dough on a lightly floured surface until all the floury crumbles are integrated. Shape the dough into a disc and roll it to 1/4 inch thickness.

Your dough may need to be chilled before rolling, but mine wasn't. Press the cookie stamps firmly into the dough, then cut them out with a circular cookie cutter slightly larger or smaller than the stamp.

Bake the cookies for 8-10 minutes on a lined pan. Test a few cookies to find your oven's ideal timing to avoid overbaking. After baking, the cookies will be soft but firm up.

Cool the cookies on the pan for 5 minutes before carefully moving them to a rack to finish cooling. Whisk the glaze ingredients until smooth and thin while the cookies bake.

Step 6

Add extra water if the glaze is too thick; it should be maple syrup or thin honey. Brush glaze on cooled cookies.

For exquisite emphasis, the glaze should be thick enough to nestle into the design. Drying makes it transparent. Allow the glaze to set before serving or storing.
