– 1 cup shortening– 1 cup sugar– 1 cup packed brown sugar– 2 eggs– 1 tsp vanilla extract– 3 cups quick-cooking oat– 1 1/2 cups all-purpose flour– 1 tsp salt– 1 tsp baking soda– 1/4 tsp ground nutmeg– 1/4 tsp cinnamonMAPLE GLAZE– 2 cups powdered sugar– maple syrup– 1/4 tsp maple extract, optional

Preheat oven to 350F without greasing baking sheet.
Cream shortening and sugars in a bowl or stand mixer.

Beat each egg carefully after adding it. Mix in vanilla.
Combine remaining ingredients; gradually add to creamed mixture.

Drop tablespoonfuls 2 inches apart onto ungreased baking sheets. Flatten lightly with fork.
