Easy No Bake White Chocolate Thin Mints Recipe

There are only four easy items you need to make No Bake White Chocolate Thin Mints. These minty Girl Scout cookies are great for the holidays.

– 20 crisp chocolate wafer cookie – 12 oz white confectionary wafers or bark coating, you can also use white chocolate, see notes. I don't recommend using white chocolate chips because they don't tend to melt well. – 1/4 tsp peppermint extract – 1 Tbsp coconut oil or shortening, optional. This thins the chocolate and makes for easier melting and dipping. – crushed peppermint

Cut the white bark coating into small pieces and place in a microwave-safe basin with oil or shortening.

Remove bowl and stir after 1 minute in microwave. Stir between 15-second microwave bursts if the chocolate hasn't melted.

Mix in the extract after melting the chocolate. To thin thick chocolate, add coconut oil or shortening.

Step 3

Dip each biscuit face-down in chocolate. To coat it, carefully flip it with a fork. Tap off any extra coating after lifting the cookie with the fork.

Step 4

Place it on waxed or parchment paper. Sprinkle crushed peppermint on wet chocolate immediately.

Step 5

The cookies are fragile, so dip them gently. Gently reheat thickened chocolate.

Allow cookies to firm before stacking or packing.
