Try our simple starter. You can make the filling ahead of time and chill it. When your friends get there, toast the crumpets and fill them up.

– 2 ready-to-eat smoked mackerel fillet – 90g crème fraîche – ½ lemon, juiced – 2 dill sprigs, finely chopped – 2 parsley sprigs, finely chopped – 1 Granny Smith apple – 4 crumpet – butter, for spreading – For the garnish (optional) – 4 slices of cucumber – 1-2 radishes, sliced – Small handful of finely chopped chive

Take the mackerel's skin off and flake the meat into a bowl. Add salt and pepper to taste, and then, if using, fold in the apple sticks.

Mix the crème fraiche, lemon juice, dill, and parsley together slowly until everything is well mixed.

Toast the crumpets and butter them very well. Put the mackerel mix on top of the crumpets.

For an extra touch, you can add sliced cucumber, radishes, and onions.
