If you have time, let the lamb sit in the sauce for a few hours. This will make the kebabs taste even better. If you can find it, you can also use goat meat.

– 900g lamb steak – 2 tbsp jerk paste or marinade – zest and juice of 1 lime – 1 tbsp honey – Handful of chopped thyme leave

Cut the lamb steaks into small pieces. Toss the chicken with the lime juice and zest, honey, thyme leaves, and some pepper.

Set away until you're ready to cook. You can use metal skewers or soak wooden ones in water for 20 minutes first.

As the kebabs cook, drizzle them with a little more honey and cook them for another two to three minutes on each side, depending on how hot the pan or grill is.

The meat should be browned on the outside but still a little pink on the inside. Put the meat in a flatbread with yoghurt, fresh herbs, and salad. Cover with foil and let it rest for 5 minutes.
