– 1/2 cup granulated sugar, plus more for rolling cookie – 1/2 cup light brown sugar, packed – 1/2 cup creamy peanut butter – 1/2 cup unsalted butter, softened – 1 egg – 1 1/2 cups all purpose flour – 3/4 tsp baking soda – 1/2 tsp baking powder – 1/4 tsp salt FOR THE PEANUT BUTTER FILLING – 6 tbsp creamy peanut butter – 2 cup powdered sugar – 2 tsp vanilla extract – 4 Tbsp milk or cream, plus a little more if needed – pinch salt

Preheat oven to 375F and line cookie sheet with parchment.

Cream sugar, brown sugar, peanut butter, softened butter, and egg in a stand mixer or electric beaters until creamy.

Fold in the flour, baking soda, baking powder, and salt until no flour streaks remain.

Step 3

Roll 1 tablespoon-sized dough balls with sugar. Place cookies on prepared baking sheet with 2 inches between them.

Bake 8 minutes. The cookies will remain fluffy and pale. After a few minutes on the baking sheet, move to a cooling rack to finish cooling.

Step 5

While the cookies cool, combine all the filling ingredients in a bowl with a fork or stand mixer until creamy and smooth.

Step 6

Put about 1 tablespoon of filling on the back of one peanut butter cookie and sandwich it with a second cookie, pressing lightly.
