Minty Griddled Courgettes For Easter Day 2024

During the summer, courgettes are at their best. Use them to make a quick and fresh side dish with garlic and herbs.

– 500g mixed courgette – 3 garlic cloves, grated – 100ml olive oil – Juice of 1 lemon – ½ small pack mint

Put the courgettes in a sieve and season them with flaky sea salt. Cut the courgettes into even-sized pieces.

Let it sit for 20 minutes to get some water out. Add the garlic, olive oil, lemon juice, mint, and a little salt to a different bowl and mix them together.

With the grill on high, cook the zucchini for 10 minutes, or until they are done and have dark char lines on them.

When they are all coloured, add them to the sauce while they are still hot. You can serve it hot or cold.
