Put the courgettes in a sieve and season them with flaky sea salt. Cut the courgettes into even-sized pieces.

Let it sit for 20 minutes to get some water out. Add the garlic, olive oil, lemon juice, mint, and a little salt to a different bowl and mix them together.

With the grill on high, cook the zucchini for 10 minutes, or until they are done and have dark char lines on them.
