These chicken skewers with a yoghurt sauce flavoured with herbs, salad, and flat breads taste great and are good for you. Enjoy as a light dinner during the week.

– 1 small pack mint, leaves picked – 150g natural yogurt, plus extra to serve (optional) – 1 lemon, zested and juiced – ½ tsp ground cumin – ½ tsp ground coriander – 2cm piece ginger, grated – 4 skinless chicken breasts, each cut into 6 piece – 4 wholemeal flatbreads or pitta – 2 Little Gem lettuces, sliced – 1 small red onion, sliced, to serve – pickled red cabbage, chilli sauce and hummus, to serve (all optional) – You will need – 4 metal or wooden skewer

Chop half the mint and mix with yoghurt, half the lemon juice, all the zest, spices, and ginger. Stir in heaps of black pepper and a touch of salt.

Mix in chicken pieces and refrigerate for 20–30 minutes. Soak 4 large wooden or metal skewers in water for 20 minutes.

Step 2

Heat the grill to medium and foil the grill tray before cooking the chicken. Grill the chicken on moistened wooden or metal skewers for 15-20 minutes, flipping halfway through, until browned and done.

Step 3

After warming the flatbreads under the grill for a few seconds, top them with lettuce, chicken, red onion, remaining lemon juice and mint, and any toppings like yoghurt, pickled cabbage, chilli sauce, and hummus.
