Healthy Chicken Wild Rice Soup Recipe

A family favourite recipe for Chicken Wild Rice Soup is full of veggies and garlic. Make it for a bowl of warmth.

– 1 Tablespoon unsalted butter – 1 1/2 cups diced yellow onion – 3/4 cup diced carrot – 3/4 cup diced celery – 1 Tablespoon minced garlic  – 1 cup quartered mushrooms  – 8 cups low sodium chicken broth or turkey stock  – 1 cup wild rice – 3 cups chopped cooked turkey or chicken

INSTRUCTION

Put the butter, onions, carrots, and celery in a large stock pot or Dutch oven with a heavy bottom. Place the pot over medium-low heat.

It will take about 5 minutes of stirring often cooking until the veggies are soft. After you add the mushrooms and garlic, cook for another two minutes.

Bring the chicken soup into the mix and then add the chicken.

After adding the wild rice, turn down the heat and let the soup boil. It will take about 40 minutes of simmering with the lid on until the wild rice is soft.
