Preheat oven to 325°F and line cookie sheets with parchment. Sift flour, baking soda, and salt in a large bowl. Set aside.

Beat the butter and sugars on medium speed in a stand mixer with the paddle attachment or a large bowl with an electric mixer until light and fluffy.
