Giant S’mores Cookies Recipe

Huge s'mores cookies are made with chewy chocolate chip cookie dough covering a graham cracker square and marshmallow. These are the best s'mores.

– 2 cups minus 2 tablespoons cake flour – 1 ⅔ cups bread flour – 1 ¼ teaspoons baking soda – 1 ½ teaspoons baking powder – 1 ½ teaspoons sea salt – 1 ¼ cups unsalted butter softened – 1 ¼ cups packed light brown sugar – 1 cup plus 2 tablespoons granulated sugar – 2 large egg – 2 teaspoons pure vanilla extract – 1 bag dark chocolate chips 20-ounce – 8 full-size graham crackers broken in half to create 16 square – 4 full-size Hershey chocolate bars broken into 4 pieces each for 16 total piece – 15 regular-size marshmallow – Flaky sea salt for finishing

INSTRUCTION

Add flours, baking soda, baking powder, and salt to a bowl. Set aside. In a stand mixer with the paddle attachment, cream butter and sugars for 5 minutes until light. Mix thoroughly after adding each egg.

Mix in vanilla. Reduce speed to low, add dry ingredients, and mix for 5–10 seconds. Mix chocolate chunks into the dough until evenly distributed. Press plastic wrap on dough and chill 24–36 hours.

Batch-made dough can be refrigerated for 72 hours. Remove dough from refrigerator and let it remain at room temperature for 30 minutes before preheating oven to 350°F.

Cover a baking sheet with parchment or nonstick baking mat. Spread 5 graham cracker squares on a baking pan. Top each graham cracker with chocolate and marshmallow.

Use 5 4-ounce dough scoops. Softly press the dough into a disc large enough to cover the marshmallow and graham cracker.

The cookies will spread less in the oven if you lightly salt them and refrigerate the cookie sheet for 25 minutes.

22–24 minutes, bake till golden brown but soft. After 10 minutes on the baking sheet, transfer biscuits to a wire rack to finish cooling. Reuse dough or store it for baking batches the next day.
