Chocolate Chip Cookie Ice Cream Sandwich Cake is a simple, tasty dessert that feeds a crowd. Any ice cream you like works for Fourth of July and summer barbeques!

– ¾ cup butter room temperature – ½ cup sugar – ½ cup light brown sugar – 2 tablespoons Karo® Syrup – 1 egg – 2 teaspoons pure vanilla extract – 1-1/2 cups all-purpose flour – 2 tablespoons corn starch – ½ teaspoon baking soda – ¼ teaspoon salt – 1-1/3 cups semi-sweet chocolate chip – ⅓ cup chopped pecans optional – 1 quart to 1/2 gallon favorite ice cream – ⅔ cup 4 ounces semi-sweet chocolate chip – 1-1/2 tablespoons butter – ½ teaspoon pure vanilla extract – ⅔ cup heavy cream – 3 tablespoons Karo® Syrup

Preheat oven to 325°F. Lightly grease two 9-inch cake pans. For easy removal, line bottoms with parchment or wax paper.

Mix butter, sugar, brown sugar, and corn syrup in a large bowl. Stir in egg and vanilla. Mix flour, corn starch, baking soda, and salt in a small bowl. Add butter. Add pecans and chocolate chips.

Spread dough evenly on two cake pan bottoms. Bake cookies until light golden brown, 20–25 minutes. Completely cool pans on wire racks.

Cover a 9-inch springform pan with plastic. Wrap cake with plastic wrap around pan edge after construction. Before cake assembly, remove ice cream from freezer 5–10 minutes.

Remove one cookie and place top-side down in springform pan. Cover cookie with ice cream to desired thickness. Add or subtract ice cream. Place second cookie on ice cream, top-up.

Cover cookie cake with plastic. Prepare to serve 2 hours after freezing. Mix chocolate, butter, and vanilla in a medium basin for rich chocolate sauce.

Boil corn syrup and cream in a small pot. Remove from heat and pour over chocolate, butter, and vanilla.
