– 1 and 1/2 cups (3 sticks; 345g) unsalted butter – 6 cups (720g) confectioners’ sugar – 1/3 cup (80ml) heavy cream (milk works too but the frosting won’t be as creamy) – 2 teaspoons pure vanilla extract – Salt, to taste – Food coloring (I prefer gel coloring) – 1 batch baked & cooled cupcakes (vanilla, lemon, chocolate, etc)

Cream butter on medium speed for 2 minutes in a handheld or stand mixer with a paddle attachment. Combine confectioners' sugar, heavy cream, and vanilla.

Start mixing on low until it comes together, then speed up and beat for 3 minutes. If frosting is too thick, add additional tablespoon of cream. Sugary frosting? Add a touch of salt. I add 1/8 tsp salt.

Step 2

Transfer 3/4 cup frosting to another bowl. Add a drop of green food colouring. Add to a 352 leaf piping bag (note). This is for stems and leaves. Set aside.

If using multiple colours, divide remaining frosting evenly. Make coloured frosting. Fit 1M or 2D piping tips to piping bags. Add spoonfuls of frosting to the bag, alternating colours.

Step 4

Colourful marbled piping bag. Close the open end and squeeze icing to the tip. Squeeze icing onto a dish to see several colours. Or pipe it on a cupcake!

Hydrangeas: Pipe on cupcake edges. Starting with constant, medium pressure, pipe stars around the edges and fill the centre. Add some white sugar pearls to the hydrangeas for style!

Roses: Piping tip on cupcake centre. Pipe a tight spiral around the cupcake with medium pressure. Reduce pressure towards the conclusion. If the finish is untidy, add leaves with the 352 leaf piping tip.

Arrange the bouquet: Circularly arrange cupcakes on a serving platter or food-safe tray. Extra cupcakes might decorate the bouquet or be served individually. Pipe leaves around cupcake edges to fill gaps.

Pipe the bouquet's bottom stems. If desired, sprinkle green on stems. Pipe a bow on the stems using the 1M or 2D piping tip and any frosting. Your bouquet is ready! Keep leftovers in the fridge for 4-5 days.
