No-bake Greek Yogurt Fruit Tart Recipe For Easter Day 2024
A simple 3-ingredient crust, protein-packed Greek yoghurt, plus your favourite seasonal fresh fruits form this healthy fruit tart. This gluten-free, no-bake dish makes breakfast, lunch, or dessert in minutes.

– 15 pitted Medjool dates (about 230g), soaked in warm water for 10 minute– 3/4 cup (100g) unsalted cashew– 3/4 cup (100g) unsalted almond– 1 cup (250g) Greek yogurt – Assorted sliced fresh fruit– Optional for topping: 2 Tablespoons apricot preserves mixed with 1 Tablespoon water

Spray nonstick spray on the bottom of a 9-inch tart pan, cake pan, or pie dish. Put parchment paper on the line. (Usually, I just make a circle out of parchment paper that's a little bigger than the pan.)

So the crust doesn't stick to the pan, and the nonstick spray helps the paper stay in place while you press the crust into the pan.

Let the dates sit in warm water for ten minutes. After you drain them, cut them in half and set them aside.

The dates, cashews, and almonds should be pulsed together in a food processor or blender until a thick "dough" forms and all the nuts are broken up, as shown above. It's going to be sticky.

Prepare a tart pan and press the dough equally into it and up the sides a little. Put the yoghurt on top of the crust. Use fresh fruit as a decoration. It's possible to add preserves and water to the topping.

Mix them together and brush them on top of the fruit for a shiny finish.

Cut it up and serve it right away, or cover it and put it in the fridge for up to a day before serving. You can keep extra tart in the fridge for up to three days if you cover it.
