Little bites of buttery coconut happiness called Coconut Snowball Melting Moments are great for the holidays or any other time. These simple shortbread cookies are so soft they melt in your mouth.

COOKIES – 1 cup unsalted butter, at room temperature – 1 tsp coconut extract, or vanilla extract – 1/3 cup confectioner's sugar – 1 cup all purpose flour – 3/4 cup cornstarch – 1 cup sweetened shredded coconut FROSTING – 3 Tbsp unsalted butter, at room temperature – 1 1/2 cups confectioner's sugar – 1/2 tsp coconut extract – milk or cream for thinning – more shredded coconut for garnish

Warm the oven up to 350F. Add the extract, sugar, flour, and cornflour to the butter and beat it until it's smooth.

Finally, add the cookies. Add the coconut and mix it in. Roll or press the dough into a disc or ball, then cover it with plastic wrap. Put in the fridge for an hour.

Shape dough into balls with a small 1-inch cookie scoop. Place the balls 1 inch apart on a cookie sheet that has not been greased.

After 14 minutes, the cookies are done when the bottom edge starts to turn a little brown.

Step 4

Take them out of the oven and leave them on the baking sheet for 5 minutes to cool down. Then carefully move to a rack for cooling.

Step 5

Take it easy on the cookies because they are still soft. To finish the cookies, put a small amount of frosting on top of each one and then sprinkle coconut on top of that.

Step 6

Beat the butter until it's smooth, then add the extract and sugar and mix them in. Add as much cream or milk as you need to make a spreadable frosting.
