Coconut & Banana Pancakes For Easter Day 2024

It's so easy to make these veggie pancakes with passion fruit and banana on top. They're great for a brunch with friends and family.

– 150g plain flour – 2 tsp baking powder – 3 tbsp golden caster sugar – 400ml can coconut milk, shaken well – vegetable oil, for frying – 1-2 bananas, thinly sliced – 2 passion fruits, flesh scooped out

In a bowl, sift the flour and baking powder together. Add 2 tablespoons of sugar and a pinch of salt, and mix them together. Put the coconut milk in a bowl and use a whisk to mix in any fat that has separated.

Next, fill a jug with 300ml of the milk. To make a smooth batter, slowly stir the milk into the flour mixture. You can also use a blender to blend everything together.

Brush oil on a small pan or flat griddle. Fry two pancakes at a time with 2 tbsp of batter; more will make flipping difficult. Put 4-5 banana slices in each pancake and cook until bubbles form and the edges are dry.

Step 3

Turn them over carefully and cook the other sides for 1 minute. They are delicater than egg-based pancakes. Repeat for 8-10 pancakes.

Step 4

In a small pan, combine the remaining coconut milk and sugar. Simmer with a touch of salt until the mixture thickens to single cream. Spoon passion fruit seeds over pancakes with this sauce.
