What's more Easter-y than hot cross buns? Use dairy-free spread and almond milk to make this veggie version. It tastes like home with cinnamon, mixed spice, sultanas, and citrous.

– 300ml unsweetened almond milk– 50g dairy-free spread– 500g strong white bread flour– 7g sachet fast action yeast– 70g golden caster sugar– ½ tsp salt– 2 heaped tsp ground cinnamon– 2 heaped tsp mixed spice– 1 large orange, zested– 70g sultana– 50g mixed peel– For the cro– 70g plain flour– For the glaze– 50g apricot jam

Heat almond milk in a pot on medium. Take the spread off the stove and melt it after simmering. Allow to cool to hand temperature.

Mix flour, yeast, sugar, salt, and spices in a large bowl. The milk mixture should be poured into a well and mixed quickly with a wooden spoon to make a sticky dough. Turn out of bowl onto lightly floured surface.

Stretch and knead the dough for 5–7 minutes until smooth, springy, and elastic. Form into a ball and place in a lightly oiled bowl. Cover and let rise in a warm place for 1 hour or until doubled.

Return the dough to the surface and round it. Knead the dough again to distribute the orange zest, sultanas, and mixed peel. Make a ball, cover the bowl, and let rise for an hour.

Line a large baking sheet with paper. Turn the dough out and gently punch out the air to knock it back. If desired, weigh the dough and cut it into 12 even pieces.

Roll each into a ball. Place the buns on the baking pan with 2cm between them. Let rise for 45 minutes under lightly oiled cling film.

Preheat the oven to 220C/200 fan/gas 7. To make the cross, combine flour with 1 tbsp of water at a time in a small bowl to generate a thick, pipeable mixture.

Pipe crosses on buns using a small round nozzle in a piping bag. Bake on the middle shelf for 15-20 minutes until deep golden brown.

Heat the jam in a small saucepan on low to loosen. Remove lumps using a sieve. Brush warm jam on buns after cooking. Allow to cool before eating.
