– 2 tbsp ground flaxseed– 200g dark chocolate, roughly chopped– ½ tsp coffee granule– 80g vegan margarine, plus extra for greasing– 125g self-raising flour– 70g ground almond– 50g cocoa powder– ¼ tsp baking powder– 250g golden caster sugar– 1½ tsp vanilla extract

Warm the oven up to 170C/150C fan/gas 3. Grease a 20cm square pan and put baking paper inside it. Set the flaxseed and 6 tablespoons of water aside for at least 5 minutes.

With 60ml of water and 120g of chocolate in a pot, melt them over low heat. Let it cool down a bit. Mix the flour, cocoa, baking powder, and ¼ teaspoon of salt in a bowl.

Use your hands to break up any lumps. Mix the sugar into the melted chocolate with a hand whisk. Beat the mixture well until it is smooth and shiny, making sure that all the sugar is dissolved.

Add the flaxseed mixture, vanilla extract, and the rest of the chocolate. Then add the flour mixture and mix well. Put some into the ready tin.

When you stick a knife in the middle and it comes out clean, the cake is done. Let it cool all the way in the pan, then cut it into squares. Keep in a jar that won't let air in, and eat within three days.
