This simple sausage tray bake is full of summer vegetables like fresh pesto, artichokes, and new potatoes. When paired with toasted bread, it tastes great.

– 1 red onion, cut into wedge– 4 new potatoes, thinly sliced– 6 canned or jarred artichokes, halved– 100g cherry tomatoe– 4 spring onions, halved lengthway– 2 pork sausages, cut into chunk– 1 tsp fennel seed– 1 small lemon, cut into wedge– ½ tbsp olive oil– 400g can flageolet or butter beans, drained and rinsed– 150ml low-salt vegetable stock– 2 tbsp fresh pesto– Crusty bread, to serve (optional)

Set the oven to 200C/180C fan/gas 4. In a 20cm x 20cm baking dish or baking tray, mix the red onion, potatoes, artichokes, tomatoes, spring onions, sausages, fennel seeds, and lemon wedges.

Add the oil and season with salt and pepper to taste. The sausages may already have a lot of salt in them, so you won't need much.

After 20 minutes, add the beans and stock. Once it's done, take it out of the oven and mix in the pesto. If you want, you can serve it with toasted bread.
