Sardine Tomato Pasta With Gremolata For Easter Day 2024
Our pasta with sardines and gremolata is a hit with everyone. This is a healthy meal that is low in fat and calories. The sardines do add some nutrients.

– 75g wholemeal spaghetti– 1⁄2 x 120g can sardines in oil– ½ tbsp capers, drained– 2 garlic cloves, crushed– 2 tomatoes, roughly chopped– 30g rocket– ½ lemon, zested– Small handful of parsley, finely chopped

In a large pan of boiling salted water, cook pasta according to package instructions. In a non-stick frying pan over medium heat, sauté capers and half the garlic for 1-2 minutes until aromatic with 1 tbsp sardine can oil.

Instructions
Add the tomatoes and cook for 4-5 minutes until softened and bursting. Sardines and rocket should be mixed several times to break up the fish and wilt the leaves. Season.

In a small bowl, mix the lemon zest, parsley, and the rest of the garlic for the gremolata.

Season to taste. After you drain the pasta, add the sardine sauce and gremolata on top of it.
