Party Angel Food Cake Recipe For Easter Day 2024

This fluffy angel food cake is a big party! It has rainbow sprinkles, crunchy hazelnuts, and a smooth chocolate ganache.

– Cake – 1 and 3/4 cups (350g) granulated sugar – 1 cup + 2 Tablespoons (133g) cake flour (spooned & leveled) – 1/4 teaspoon salt – 12 large egg whites (room temperature) – 1 and 1/2 teaspoons cream of tartar – 1 and 1/2 teaspoons pure vanilla extract – 2/3 cup (127g) rainbow sprinkles* – Ganache + Topping – 8 ounces (226g) semi-sweet chocolate, coarsely chopped – 1 cup (240ml) heavy cream – 1/2 cup (75g) chopped hazelnut – Rainbow sprinkle

Set the oven rack to lower centre and preheat to 325°F (163°C). Bake the cake: Pulse sugar in a blender or processor until powdered.

Reserve 1 cup for step 3 and keep the remainder in the food processor. Mix flour and salt in the food processor. Until light and aerated, pulse 5-10 times.

A handheld or stand mixer with a whisk attachment should whip egg whites and cream of tartar on medium low for 1 minute until frothy. Add 1 cup of sugar steadily on medium-high.

Whip for 5-6 minutes to generate soft peaks (see photo). Beat in vanilla until blended. Sift flour into egg whites. Sift slower in three additions and gently fold with a rubber spatula. Then carefully fold in the sprinkles.

Scrape mixture into 10-inch angel food cake pan. (No pan grease!) Bake the cake for 40–46 minutes until a toothpick comes out clean. Rotate pan halfway through baking.

Let the cake cool upside-down on a wire rack for 3 hours. After cooling, run a thin knife along the sides and tap the pan on the counter to release the cake.

Make ganache: Put chopped chocolate in a big bowl. In a small saucepan, heat cream over medium heat, stirring occasionally. When it boils, remove from heat and pour over chocolate.

A wooden spoon should be used to gently stir the ganache until smooth. Let cool for 15 minutes. It will thicken gradually. Spoon or pour over cake. Top with hazelnuts and sprinkles.

Ganache is likely leftover. It goes well with ice cream! Keep leftover cake covered at room temperature for 3 days or refrigerated for 1 week.
