For Lilac SugarPulse sugar and lilac blooms in a food processor to make lilac sugar. The sugar should turn pale violet.

This makes 1 cup of sugar to fit in a conventional food processor, but the shortbread recipe only requires 1/2 cup. (a little food processor can make 1/2 cup of sugar)

Short Bread Cookies
Preheat oven to 350F.

In a food processor, combine flour, butter, 1/2 cup lilac sugar, salt, and vanilla extract. Pulse until dough forms a clump. Roll the dough into a rectangle on a lightly floured board after processing.

Preheat oven to 350F. Scatter half the lilac blossoms over the dough, fold it twice to include them, then re-roll it into a rough rectangle. I prefer halving my dough twice.

Lilac shortbread dough rolling
Scatter the remaining lilac flowers over the dough and roll it out to 1/4-1/3 inch thick, embedding them. If needed, gently massage them in with your fingers.

Cut 24 cookies with a 2-inch biscuit cutter or other circular cutter and lay them on a baking pan. cutting out purple sugar cookies on a sheet

Bake the cookies for 15 minutes until the edges are slightly brown. Remove and cool on the baking sheet for a few minutes before moving.
