Easy Mini Plum Brie Tarts have puff pastry, melted brie, and plum slices. Honey and fresh thyme make these tarts perfect for brunch or breakfast. Simply bake plum-brie puff pastry tarts! The plums may be hardest to slice.

– 1 sheet puff pastry – Peach (or apricot) preserves  – 4 ounces brie cheese – 3 small to medium plum Egg wash – 1 large egg – 1 Tablespoon water – 2 Tablespoons turbinado Honey mixture: – ⅓ cup honey – 1 Tablespoon fresh thyme leave – 1 teaspoon freshly squeezed lemon juice

Preheat oven to 425°F. Large rimmed baking sheet, parchment.Transfer puff pastry sheet to lightly floured surface. Roll the pastry 12x12 inches gently with a rolling pin. Cut 9 4-inch squares.

Put one tablespoon of preserves on each square, but don't go past the ends of the pastry. If the slices are big enough, put two to three brie on top of the jams.

On top of the brie, put two or three slices of plum (or pluot).

Step 3

In a small bowl, beat the egg and water together to make egg wash. Use egg wash to brush the edges of the dough. Spread the sugar out evenly around the edge.

Step 4

It will take 25 to 30 minutes of baking until the ends puff up and are golden brown and crisp. Brie that melts could cover the dough.

Step 5

While the pies are baking, mix the honey, lemon juice, and fresh thyme. Let the tarts cool on the baking sheet for a while.

Step 6

Drizzle the honey-thyme mixture on top to serve. Warm is suggested. Have fun!
