– 5 ounces dark or semi sweet chocolate, cut in small pieces  – 2 Tbsp unsalted butter, plus more for prepping ramekin – 3 large eggs, separated – 2 Tbsp granulated sugar plus more for prepping ramekin – 1 tsp vanilla extract – pinch salt – powdered sugar for dusting

Warm the oven up to 400F. Spread a lot of butter in 4 ramekins and sprinkle white sugar all over the inside.

Melt the chopped chocolate and butter in a medium-large basin over just simmering water, taking care not to touch the water or splash it. For the courageous, you can do this in a saucepan over direct fire.

If the chocolate melts all the way, take it off the heat and mix in the egg yolks, extract, and salt with a whisk until the mixture is smooth.

In a different bowl, beat the egg whites until they foam up. Then, add the sugar and keep beating until stiff peaks form.

Mix the egg whites into the chocolate slowly until there are no more white spots. Don't let all the air out of them that you just blew into them.

Divide the mixture evenly between the ramekins and smooth the top if needed.

Separate the mousse from the ramekin sides by running an offset spatula (or finger) across the top rim of each cup. This helps soufflé rise straight.

Put it in the oven for 10 to 12 minutes, or until it rises. You can still shake the soufflés a little. Serve right away with powdered sugar on top.
