Ingredient
For the filling:– 1 ½ tablespoons salted butter– 3 tablespoons light brown sugar packed– ¾ teaspoon ground cinnamon– 2 ¼ cups grated Granny Smith apple– 6 tablespoons apple juice– 1 ¼ teaspoon cornstarchFor assembly:– 2 sheets puff pastry thawed– 1 large egg– Splash of water– 1 cup powdered sugar– 1-2 tablespoons milk– ½ teaspoon vanilla extract
Introduction
Preheat the oven to 400°F. Set aside a sheet tray. Heat butter in a small skillet on medium-low. Add cinnamon and brown sugar to the pan. Dissolve sugar.
Step 1
Add grated apple and combine. Simmer covered for 10 minutes, stirring occasionally, until soft. Mix apple juice and cornflour in a small bowl.
Step 2
Stir continuously as you gently add the slurry to the apple mixture for 1 minute. Mixture thick. Set aside after cooking. Place one puff pastry sheet on a lightly floured, clean worktop.
Step 3
Roll into 12x9 rectangle. Slice the pastry seam in thirds. Cut thirds in half for 6 rectangles. Lay rectangles on the sheet tray without touching.
Step 4
The second puff pastry sheet should be cut the same way, set aside, and covered with a clean kitchen towel to prevent drying. Place apple filling equally in pastry centres.
Step 5
Keep a ½ inch gap for smoothing edges. Stir egg and water in a small bowl. Wash pastry edges with egg. On the filling, place the remaining pastry rectangle.
Step 6
Press the edges hard to assemble the pastry. Keep going with rectangles. Brush tops lightly with egg wash. Bake 13-15 minutes till golden. Cool on a wire rack after 10 minutes on the tray.
Step 7
Mix powdered sugar, milk, and vanilla in a small bowl. Try a tablespoon milk. It may be too thick, so add 1 tablespoon milk slowly. Frosting should be thick but pipeable.
Step 8
Put the glaze in a piping bag or plastic baggie and cut a corner when the pastries cool. Zig-zag icing on top. Eat them right away or let the icing set for 15–30 minutes.
