Best Salted Caramel Pretzel Cookies Recipe

These salty caramel pretzel cookies are chewy and full of caramel chips and pretzel pieces that make them the perfect mix of sweet and salty.

– 1 cup unsalted butter – 1 cup granulated sugar – 1 ½ cups packed light brown sugar – 1 teaspoon fine sea salt – 2 large eggs room temperature – 1 ½ teaspoons pure vanilla extract – 2 ½ cups all-purpose flour – 1 teaspoon baking soda – 10 ounces caramel baking chip – 1 cup roughly chopped salted pretzel piece – flaky sea salt

Butter will froth and brown in a medium pot over medium heat if stirred constantly. It should take 6–8 minutes. Keep watching since no one wants scorched butter in their cookies.

Stop cooking and let the pan cool for 15 minutes. Mix the sugars, salt, and cooled brown butter in a stand mixer with the paddle attachment or a large basin with an electric mixer or wooden spoon (you can mix this dough by hand).

Smoothly combine.Add eggs and vanilla. Mix flour and baking soda and slowly add to butter. Mix until mixed without overmixing. Combine pretzels and caramel chips.

The melted butter may prevent the chips from mixing well into batter if made by hand, so I put the dough in a gallon zip-top bag and roll it into a log to force the chips in as it chills.

Chill 2+ hours. I normally photograph at night, although 24 hours is feasible. Ready to bake? Preheat oven to 350°F and line two baking sheets with parchment.

Preheat the oven when the dough is room temperature. It will be hard before settling. On prepared baking sheets, portion dough using a medium cookie scoop (1.5 teaspoons).

If desired, add pretzel pieces or twists to dough balls. Pre-heat oven and bake cookies for 12-13 minutes until edges brown. You want undercooked centres.

Just lightly sprinkle flaky sea salt on each. After 2-3 minutes on the baking sheet, cool the cookies on a wire rack.
