This lemon sorbet is the right mix of sour and sweet. It tastes like frozen lemonade and is great for hot summer days.

– 1 ¼ cups water– 1 cup plus 3 tablespoons sugar– 1 heaping tablespoon grated lemon zest from about 2 lemon– 1 ½ cups lemon juice from about 10-12 lemons or bottled

INSTRUCTIONS
Put the water and sugar in a small, heavy pot. Bring to a boil over medium-high heat. Cook, stirring every now and then, for about one minute, or until the sugar is gone and the syrup is clear.

Put the syrup away from the heat, add the lemon juice, and let it sit for half an hour.

Mix in the lemon juice, then cover and chill in the fridge for two to three hours.
