Apple Cheese Potato Pie Recipe For Easter Day 2024

Add potato, cheese, onion, mustard, and thyme to apple pie to make it more savoury. The pie looks beautiful because it has both sweet and spicy tastes.

– 30g salted butter – 1 tbsp vegetable oil – 2 large onions, halved and finely sliced – ½ bunch of thyme, leaves picked – 30g plain flour – 500ml vegetable stock – 1 tbsp wholegrain mustard – 1 tbsp white wine vinegar – 450g potatoes (we used Maris Piper), cut into 2-3cm chunk – 3 apples, peeled, cored and chopped into 1-2cm chunk – 150g mature cheddar, grated For the pastry – 300g plain flour, plus extra for dusting – 70g cheddar, grated – 150g cold butter, cut into cube – 1 egg, beaten

Start with pastries. Mix flour, cheese, and a touch of salt in a large bowl. Rub butter in with your fingertips until it resembles breadcrumbs. Add 4-5 tbsp cold water and make dough. Wrap and chill 30 minutes.

For the filling, melt butter in a medium skillet over medium heat, add oil and onions, and cook for 10-15 minutes until caramelised. Add thyme and sauté 1 minute more. Add flour and mix.

To avoid lumps, slowly add stock. Simmer for 10 minutes, stirring occasionally. Late in cooking, add mustard and vinegar. Put the potatoes in a big pan of cold water, bring to the boil, and cook for 4-5 minutes until barely done and still keeping their shape.

Drain, then add to sauce. Add apples, cheddar, and seasoning and stir again. Preheat the oven to 200C/180C fan/gas 6. Put the filling in a 28cm oval baking dish (ours was 28 x 18.5 x 6.5cm).

Slice into 1cm strips. Lay half the strips across the dish horizontally, leaving spaces of a few millimetres, then weave in the remaining strips vertically, over and beneath, again spacing them apart by a few millimetres.

While it cools, roll out the pastry to a £1 coin thickness on a lightly floured board. If desired, re-roll trimmings and cut into flowers, leaves, or other decorations (see tip below).

Place pastry shapes on top and brush with beaten egg. Bake for 50 minutes, covering the top with foil if it browns too rapidly. Let cool for 10 minutes before serving.
